The Fresh Chile Company is a community-driven effort that is led by the partnership of Randy McMillan, Founder, The Fresh Chile Company, and our very own Chris Lang, Founder, Organ Mountain Outfitters. Randy and Chris would drive up to Hatch to see the farmer, Scott Adams of Adams Produce, personally every week to check on the farm crop. They would hand-pick Hatch Green Chile and Red Chile peppers from the field to create the tastiest Hatch Green Chile and Hatch Red Chile sauces that embrace the true taste of New Mexico. The sauces were so good they would have taste-testing outside the store on Saturdays at the Farmers Market, and they would sell out the same day!

When building out the facility together in Las Cruces, they committed to finding the right personnel locally. You might know their head chef.
